Breakfast:

Pretty self-explanatory. Oatmeal with cinnamon, Oikos. I added a drizzle of honey to the yogurt after I opened it.

Lunch:

IMG00121

Veggie burger on a whole wheat bun with a slice of ff american cheese, applesauce, spinach salad. The BBQ sauce was spicy, so to cool my mouth down I had this for dessert:

I don’t know what my hand is doing.

And now I’m late for class. More tonight!

Weekend Highlights

This will be quick. And pictureless. But I wanted to share. Regular updates will resume tomorrow.

-Friday’s workout was BALLER. I took a 60 minute kickboxing class, which was pretty good, but when I was done, I felt like I had more energy to get out. I jumped on the treadmill for an additional 3 mile run. It felt so good to leave the gym completely exhausted. It also helped me share a bottle of wine with the bf later absolutely guilt free! Love it. I actually ended up only having about a glass and a half- I put equal parts wine and seltzer water in my glass to make a spritzer, so my glasses went a lot slower than his did.

-In addition to a bottle of Chardonnay on Friday night, the bf and I picked up a 6 pack of pumpkin ale. It was Jack’s Spiced Pumpkin Ale and…it tasted terrible. I was SO excited for it because I’d never tried it before, and I was sorely disappointed. We each took about 3 sips, couldn’t taste the pumpkin at all, and poured it out in favor of the wine. Oh well. I still want to try a different kind of pumpkin ale- does anyone have any suggestions??

-Saturday night was a friend’s 21st birthday, so we went to bars with him. I had a vodka/soda and half a Corona. A certain boyfriend of mine didn’t show as much self control…I practically carried him home!! Haha I guess somebody thought he was back in college when he saw all his friends :)

-This morning we embarked out our first culinary adventure together: banana pancakes! Just like the Jack Johnson song :) We had to use chocolate almond milk instead of regular milk since that was all I had in the apartment, but we ended up with absolutely delicious chocolate banana pancakes. It was a pretty good way to start the day off. Then we saw a movie and TRIED to go to Sam’s Club but it was closed. It’s his membership, so I need him to come visit again ASAP…haha.

-We finished the day with subs for dinner in front of the Skins-Cowboys game. I was born in DC so I’m a Skins fan- I was SO EXCITED when my boys won!!! I also managed to get in a quick 3 miles on the treadmill after the bf left. After the bar last night, it felt good to get a (short) sweat sesh in.

I hope everyone else had a FABULOUS weekend! I am certainly not ready for it to be Monday already…

Successful!

Success #1: I slept till 10:30 today! I’ve been having a lot of trouble falling asleep lately- I’ll toss and turn for a couple hours, no matter what time I try to go to bed. And my body has this internal alarm clock that goes off at 9 am without fail (if my real alarm doesn’t beat me to it). SO I was really excited when I woke up and saw 10:28 on the clock this morning. I already feel more energized!

Success #2: BREAKFAST!! I made oats- chocolate-pumpkin-apple oats, to be exact. I already knew I wanted pumpkin in my breakfast, but when I was browsing for good fall recipes last night I saw a couple apple-pumpkin muffins, so I decided to give it a try. I used:

1/2 cup oats

1/2 cup pumpkin

1/4 cup unsweetened applesauce

1/3 cup each unsweetened chocolate almond milk and water

2T wheatberries (my first time using them…the chew is AMAZINGGG)

2T maple syrup

a liberal sprinkling of pumpkin pie spice

IMG00109

IMG00108

It was a delicious bowl of oats!! These pictures do NOT do it justice- mostly because they are from my blackberry and my blackberry camera sucks. The good news is my mom found my camera cord and should be sending it down shortly!

Along with my amazing, thick, chewy, creamy, autumn-y bowl of oats, I had this:

IMG00111

It’s got apple chunks in it :) not bad! AND Kroger yogurt was on sale this week for 3/$1, so that little baby only cost me $.33…love a good deal! haha

I ate all of this sitting here:

IMG00112

I’m glad you can’t see the TV screen because I was watching Scooby Doo. In my defense, there is VERY little on TV on Friday morning. Le sigh.

My to do list for the rest of the day includes:

-LAUNDRY. laundry laundry laundry.

-a trip to the bank. for quarters. to do my laundry.

-lots and lots and lots of reading. because it’s rainy and there’s nothing better to do. slash, there’s nothing I would RATHER do.

-possibly, the hunt for the PB larabar!! Kroger does not have it. Harris Teeter does not have it. Whole Foods does not have it. That leaves GNC. So, if I’m feeling up to it, I might go check it out.

-kickboxing at 5:30!!! This will feel GREAT after my day off yesterday!

-and then the bf is coming into town tonight! I love how much I’m getting to see him these days! Maybe we’ll do something exciting for dinner :)

Have a good afternoon everybody!

A Cup of Tea and a Good Book

The second I woke up this morning, I knew the gym just wasn’t happening today. From my bed, I could see that the sky was grey, and I could hear the rain and the wind on the skylight. It was all I could do just to make it to class. Fall is officially here, folks, and not in the brisk, red-orange-yellow, smells-like-apple-cider, time-to-break-out-the-pumpkins sort of way.

I bundled up in jeans, a long-sleeved shirt, a hoodie, and a rain jacket. On Tuesday, I wore a dress to class- WHAT IS GOING ON HERE? Class was long and boring and it was all I could do to keep my eyes open. Even in my windowless classrooms, you could tell it was gross outside.

My eats today were mostly comfort foods. No pictures, because the lighting was so awful (thank you, rainy day) that everything looked grey and unappetizing. I had an omelet for breakfast, cottage cheese, a banana, and a grilled cheese, spinach, and tomato sandwich for lunch, oatmeal and fage for an afternoon snack, and I’m still working on dinner. I had a mug of hot tea and a cup of soy pudding a little while ago, but I can’t make up my mind about dinner. I’m not completely hungry yet. Oh yeah- that might be because I snacked on an entire container of mushrooms, dipped in salsa about an hour ago. I hadn’t had fresh veggies in a while, so that tasted pretty good.

Right now I’m reading my latest copy of Self and WATCHING GREY’S! Finally!!! I’m so excited that the season is underway again! I’ll probably grab dinner afterward.

Sorry for the lack of pictures. It just wasn’t in the cards today. Neither was my “Gentle Yoga” class, clearly (I did abs and lower body at home instead). I did want to post though, and let you know I’m still here. And I don’t have class on Fridays, so I’m planning on something kind of interesting for breakie tomorrow. Hopefully it will not fail like my last experiment.

So, in the spirit of my lovely weather today, what’s your favorite thing to do on a rainy day? I’m a fan of curling up in bed or on the couch with a cup of tea and a really good book. I just finished reading Anagrams by Lorrie Moore, which I actually really liked. It was the perfect way to pass the time after class. Now I just need to find something new!

Simple.

The rest of the day was much more successful on the food front.

For lunch, I had a tofurkey sandwich with spinach and laughing cow on whole wheat. I tried a new kind of tofurkey: peppercorn. Halfway through the sandwich I decided hot sauce would go well with the “kick” of the peppercorn, so I added some. It was yummy. On the side, I had 1/2 cup whipped cottage cheese.

IMG00096

Then I wanted sugar, so I had one of these:

IMG00097

I always eat it layer by layer- I’ve been doing it since I was a little kid. Tastes better that way, I swear!

After class I headed to the gym, and on my way I fueled with a Peanut Marshmallow Eclipse pure protein bar. This is BY FAR my favorite of all of them (except I still haven’t tried the chocolate chip- is that one as good as the rest?). It must be all the gooey marshmallowy goodness. It also kept me going for a full FOUR HOURS- even with a tough treadmill workout. I didn’t get hungry for dinner until 7:30!! I definitely need to keep these bars in stock.

For dinner, I tried a sweet and savory combo: a baked sweet potato with a little cinnamon and a dollop of plain yogurt, and on the side I had some black beans and a container of Oikos. No picture, because my roomie’s boyfriend was in the kitchen and we don’t need him to think I’m crazy :) The sweet potato was crazy filling though- I’m happily stuffed right now.

I also brought a cup of diet hot chocolate upstairs with me to sip on while I read. It feels like fall!!

IMG00103

Last night, I snuck downstairs for some frozen mango, so I will probably do the same thing tonight. It’s the perfect, sweet, late night study snack.

And thanks to everyone for the advice on the oatmeal…one of these days, I’ll try it again!!

Since I don’t have class until 2 today, I decided to get a little more creative with my oatmeal. When I left for school, my mom gave me a can of light coconut milk that had been in the pantry- she wasn’t using it, and she thought maybe I could turn it into something fun! Well, yesterday I picked up some chocolate almond milk at Whole Foods, so I decided to try out chococonut oats this morning.

I cooked 1/2 cup oats with 1/2 cup almond milk, 1/4 cup coconut milk, and a little bit of water. It smelled DELICIOUS while it was cooking- but the oats didn’t absorb any of the liquid!!! Instead, I ended up with this watery bowl of oats.

IMG00095

What you see on the side is a container of ff coconut cream pie yogurt. I tried to stir some of that in to make it a little thicker, but it didn’t work too well. I ate the rest of the container by itself :)

The ended up eating these anyway. First I had most of the chocolate soup, and the remaining oats were actually pretty delicious. I just don’t know what went wrong!! Oh well…the mix of chocolate and coconut flavors tasted pretty good anyway.

See you later tonight- I’m going pretty simple for lunch and dinner so I end up with something that looks as pretty as it tastes.

Stop and Breathe

Phew! I had SUCH a fun weekend with my boyfriend, but I’ve been paying for it for the last 48 hours! I got home Sunday evening, and immediately set to work: I had a paper due Monday and TWO papers due today!! It’s been ridiculous and there has been a lot of instant oatmeal and sandwiches and coffee from Starbucks getting me through. But, as of 11 am today, I am (mostly) free for the rest of the week, so I’m back to the blog!

For breakfast today, I had 1/2 cup oats cooked in water, and topped with a crumbled Kashi trail mix bar. I liked the crunch that the bar added!

IMG00089

This held me over for about 2.5 hours. My stomach started to grumble in the middle of class, but I was prepared. Here is what I brought for lunch:

IMG00091

A serving of Kashi crackers, about 2T pb (I didn’t bring the whole jar, I promise…I put some in a tupperware container), a Pure Protein Bar, and an (unpictured) apple. It was “snacky,” but I did that on purpose- in case I couldn’t eat it all at one time. During class, I ate the crackers, the apple, and the pb. I saved the Pure Protein bar for before my workout.

The class I took today is a 60 minute class divided into aerobics, weight training, and yoga. For the aerobics section today, we did some stepping. I have never tried stepping before, but once I got the hang of it, I really liked it. I was definitely dripping sweat at the end of the 25 minute segment!!

Since I was all. out. of. food, I decided to go grocery shopping after the gym. While waiting for my prescription in CVS, I got really hungry, so I bought a Luna Bar to hold me through the tempting aisles of the grocery store.

IMG00093

It did exactly what I needed it to do and my stomach shut right up. My only complaint about Luna bars is that they often leave my mouth feeling really dry. Does anyone else have that problem?

When I finally got home from the store, I made myself dinner. I had a Gardenburger patty on whole wheat toast, with a slice of lf american cheese, mustard, and hot sauce.

IMG00094

I also had an unpictured vanilla yogurt, which I sprinkled with pumpkin pie spice and drizzled with maple syrup. I enjoyed both of these while watching House- what a good show! It was a much needed mental break for me.

Now I’m just sitting on my bed, sipping hot chocolate and doing a little work for tomorrow. I’m about to go catch up on all your lovely blogs, and then I am going to go to sleep (which I am VERY excited about). See you all tomorrow!!

Late Night

This is gonna have to be a quick post because I spent the last 5 hours in the waiting room of the ER (nothing serious, just friend who sprained an ankle, but it took for.freaking.ever) and ALL I WANT TO DO IS SLEEP.

Dinner last night: a hodgepodge of things. skyr.is yogurt (so thick and creamy and tart and COME WITH ITS OWN SPOON!! my $3 splurge at whole foods) and some mango and 2 slices of whole wheat toast. I’ve eaten a lot of mango over the last 24 hours but you only get one picture because it always looks the same.

IMG00073

IMG00078

Breakfast this morning: Cottage cheese oats! A first for me. I added cinnamon to the top, but it wasn’t sweet enough, so then I put a few mango chunks on top. Nice and creamy, and it kept me going for almost 4 hours!!

IMG00077

Lunch:

IMG00079

I ate this throughout all my classes. I don’t like eating so many bars in one day (not enough volume for my liking!), but it was all I had that was portable. I’m still working on this back-to-back schedule. I have some really good ideas for next week, though! On the plus side, the apple cinnamon zbar is SCRUMPTIOUS.

Snacks: I had another Oikos + honey + 1/2 a crumbled zbar. I’m guessing you know what that looks like, though. I also had a couple spoonfuls of cottage cheese right out of the container :-D and some mango. I told you there was a lot of mango.

Workout: I was a little sore from yesterday’s run (in a GOOD way), so I opted to take a yoga class today. It was great!! I felt so relaxed afterward. It was just what I needed today. I had originally intended to do a little cardio before, but I chose not to- and I’m glad I didn’t. My body needed a break and it was happy to just do the yoga.

Dinner: Tonight was a friend’s 21st birthday! To celebrate, we went out to the new “gourmet” burger bar in town. It’s a pretty cool idea- you get to pick your burger, your bun, and your toppings. I had a veggie burger “in a bowl” (i.e. on a bed of lettuce) with jalapenos, grilled pineapple, and tropical salsa. It was SO good!! I will definitely be going back there to try more combos!

aaaand while I was at the hospital I grabbed some animal crackers out of the vending machine since my stomach was growling. It was the best option they had. I also hot a nice mug of hot chocolate when I finally got home :)

Now I’m off to bed (finally)!! I’ll be back tomorrow afternoon to post breakfast and lunch, but then I’ll be away until Sunday (I’m visiting my boyfriend for the weekend). I might not have pictures from when I’m away, but I will certainly come back with a recap of my food! Have a good night!

Snacking the Day Away

Posted September 17, 2008 by littleengine

I think I’m going to start doing daily re-caps instead of trying to post throughout the day: this way you’ll get my whole day’s worth of food and I won’t just forget to post after breakfast. I seem to be good at that. Plus, this works with my schedule every day. Hopefully, over breaks and stuff, I’ll be able to post more often, but for now, I hope this is ok!

Onto the munchies :)

I woke up with that bottomless pit feeling today. Like- my alarm went off, and my stomach answered by growling. It took me a little while to figure out why, but I realized I can, um, attribute my snackiness today to hormones. Awesome.

I was so hungry that before I did ANYTHING (even shower), I had to eat something. I settled for banana slices on whole wheat toast:

IMG00069-1

I only planned on using half a banana but, um, the other half managed to make it into my mouth anyway. Sneaky!

I ate my 2nd breakfast after I got ready for the day. No picture, but it was just a basic bowl of oatmeal with cinnamon and maple syrup. I made it with soy milk today instead of water. You know what that looks like :)

I did homework for most of the morning, since House got in the way last night, and I snacked. A lot. It works out because I’ve been trying to clean out the fridge. I did a very good job:

IMG00070

IMG00027

IMG00065

The bar was gross, btw. Very little-kid-desserty. I don’t know why I had it. It was stale. I only had half.

I had a late lunch right before I left for class at 2: pb&j. Plus an extra spoonful of White Chocolate Wonderful PB straight out of the jar. Since I was chewing on my way out the door, I didn’t take a picture. Good thing I ate really generic food today, huh?

Little secret: I caved and brought PB into the house. I usually don’t do this but PB&Co was on sale last week and who can resist that??

I was supposed to go to kickboxing today, but I have done one too many squats in the past 3 days, so I opted to do speed work on the treadmill instead. About an hour before the gym, I had this:

IMG00058

I don’t know how I feel about this. I really really like that it has portion-controlled granola involved, but the granola was a little stale. And I am not a huge fan of strawberry yogurt. But those two little problems aside, it was pretty good. I might actually buy it again- but only if it’s on sale.

The gym was amaaazing. I ran for 45 minutes and worked up a REALLY good sweat on the treadmill. I’m starting to realize that I actually like running at faster paces better- my stride feels more comfortable. Pretty sweet.

After some quick stretching/abs, I headed home- but I stopped at Whole Foods, first. I walked around for a little bit and I was SO excited to see that the prices for the food I normally buy are actually CHEAPER than the “normal” grocery stores around here. Now I have an excuse to shop there all the time! As a result, I bought a lot of stuff I wasn’t planning on but- greek yogurt for $1.50? How can you resist that?? I also found a BLUEBERRY ZBAR- I bought two.

I was so excited that I ate it in the car on the way home:

IMG00072

Dear ZBar, you are amazing. This was great- I feel like it’s so easy for blueberry flavor to seem fake, but this was just perfect. Sweet without being too sugary, and the blueberry flavor was really light. It left a great taste in my mouth, haha :)

The zbar plus all the snacking today kind of ruined my appetite for dinner. I’m only just starting to get hungry now. I’ll probably go throw something together now and put it in tomorrow’s post. Have a great night, everybody! Tomorrow’s Thursday- we’re almost to FRIDAY!

More Bars in More Places

I’ve decided that over the next few days I’m going to do a little work on the blog- make it a little more exciting and a little more me. I’m going away this weekend (Friday night to Sunday afternoon) and starting next week I hope to have a slew of exciting posts for you all!

Now, onto today. Busy Tuesday (just like VeggieGirl!). I am still having a lot trouble figuring out when to eat on the days I’m in class from 11-3:15. You’ll see what I mean as I go through the day.

I ate breakfast at 10 and it was one of my “staples”: an egg-white sandwich. I made it a little more exciting today: 1/2 cup egg beaters, 1 wedge of laughing cow, JALAPENOS (love a little kick!), served on whole wheat toast and topped with hot sauce. Yum! Open-faced, so you can see what’s inside:

IMG00063

Then I headed off for class with a mug of hot chocolate and a zbar tucked in my bag for a snack:

IMG00064

By the way, my new trick with hot chocolate is to add CINNAMON too it. It makes it 10x better! You can definitely taste the cinnamon and it adds an extra dimension of flavor that makes it so much more exciting- and grown up! Haha.

The problem was that my sandwich held me over almost TOO well. I ate it before 10, and I didn’t start feeling even a little bit empty until 2! My food NEVER holds me over that long. I had a workout planned for 4 (and a snack to eat on the way to the gym ready), so I decided to eat the smores bar right when I first felt a little hungry, then eat a BIG dinner later to make up for my lack of a lunch- since I didn’t want my stomach to be too full before the gym.

The s’mores bar was SO good. It was my first time having this flavor and I loved it.  I looked at the ingredients list and it has white chocolate chips in it- delish!! Now I’m just waiting for my local supermarkets to get the blueberry cobbler flavor in…

Got out of class and headed straight for the gym. Snacked on this bar of deliciousness on the walk:

IMG00066

Sorry it’s blurry, but that bar is basically straight candy!! So good! And it did a great job fueling my workout: a 60 minute class that was a mixture of aerobics, strength training, and yoga. I felt so good afterward!

Surprisingly, I didn’t get hungry for dinner until almost 7. I’m getting a little low on food and since I didn’t have my oats this morning, I had them for dinner: 1/2 cup oats cooked in 1 cup water and cinnamon, with maple syrup on top. On the side, I had a sliced banana, also topped with maple syrup. I ate a lot of the banana slices with bites of oatmeal :)

IMG00067

And followed by yogurt and cookie crumbs for dessert:

IMG00068

Since this is NOT enough food for me for today, I have a late night snack of 2 slices of whole wheat toast with 2 tbsp pb planned. There’s also a pudding cup in the freezer- I think I might go eat that now!

Off to watch House!
